Our summer sausage and salami are made with extra lean cuts of beef and pork, specially seasoned to give you that unique, tangy, German flavor. We smoke our sausage in an old fashioned wood smoke house, using hand split chunks of maple or other hardwoods to build the fire.

Cheddar Summer Sausage: Our original recipe of beef with Cheddar cheese mixed through out each stick.
Garlic Beef Summer Sausage: Our garlic summer sausage is also uniquely seasoned. This style boasts a mild hint of garlic to give just a little more tang to each bite. If garlic is your flavor of choice, this is the style for you.
German Beer Summer Sausage: This style combines our regular sausage with red pepper flakes and German beer for a strong old-world German tang.
Jalapeno Pepper Summer Sausage: Our pepper summer sausage is perfect for the person who enjoys a little extra zip. We use jalapenos and crushed red pepper to give this style a very unique flavor.
Pepper Jack Cheese Summer Sausage: We add a zesty pepper-jack cheese to our regular recipe.
Regular Summer Sausage: Our summer sausage is made with extra lean cuts of beef and smoked the old-fashioned way to give you that unique, tangy, German flavor.
Salami: This style is different than that of our other styles. It has more seasoning and combines both beef and pork. If your looking for something with a unique taste, this is for you.
Swan Lake Summer Sausage: This style offers our original flavor with a combination of Beef and Pork cuts of meat.
Elk Summer Sausage: We make this sausage using elk lean cuts. we season the sausage with our traditional recipe.
Buffalo Summer Sausage: This style uses our regular recipe with the addition of lean buffalo meat.
